This delicious Pineapple Lime Jello Salad is a family favorite recipe made with cottage cheese, crushed pineapple, pecans and Greek yogurt!

This pineapple lime jello salad is one of my favorite desserts to make and eat. It’s light and sweet, fresh and flavorful, and so very easy to make. This recipe is a variation of the lime jello salad my husband’s mother has been making for years. It’s a dish that shows up on every holiday dinner table and one that is requested by everyone in our family. My mother-in-law calls it “Moon Glow Salad”, and it is absolutely delicious.

You might also know this nostalgic salad as Green Jello Fluff or Mormon Salad. It is a jello salad that was very popular in the 1970’s.

  • Pineapple:Use a 20-ounce can of crushed pineapples. Drain and save the juice.
  • Cottage Cheese:Use small curd cottage cheese.
  • Greek Yogurt:I use greek yogurt in this recipe. You may use plain low-fat yogurt or mayonnaise if preferred.
  • Lime Jello:I use 2 small packages of sugar-free lime jello.
  • Pecans:I love using chopped pecans, but you may use chopped walnuts instead.

How To Make This Recipe

  1. Drain juice from can of crushed pineapples and reserve the liquid in a measuring cup.
  2. In a large bowl, mix together the cottage cheese, drained pineapple, and greek yogurt. Cover and refrigerate to use later.
  3. Measure the juice from the can and add hot water until you have 2 cups of liquid.
  4. Using another bowl, mix the 2 packets of jello with the 2 cups of liquid. Stir until diluted.
  5. Cover and refrigerate the jello mixture until it begins to gel, about 1 hour.
  6. Remove the jello mixture from the refrigerator and whip it until it becomes frothy, about 10 minutes.
  7. Mix the pineapple mixture and the jello mixture together.
  8. Stir in the nuts.
  9. Refrigerate until it begins to firm, 4 hours.

Expert Tips

  • Feel free to use sugar-free jello, if you’d like.
  • Make sure the jello has just started to set before whipping it. You should notice that the jello looks like it is thickening up a bit, but is not completely firm.
  • Use chopped pecans, walnuts, or you can leave the nuts out completely.

Ingredients

  • 20 oz can crushed pineapple (drain the juice and save)
  • 24 oz carton of small curd cottage cheese
  • 3 tablespoons Greek Yogurt
  • 2 small packages sugar-free lime jello
  • ½ cup pecan chips

Instructions

  • Drain the juice from the can of crushed pineapple and reserve the liquid in a measuring cup.

    My grandmother used to make this for every big family dinner. I LOVE it!
    Hers was lime jello, cottage cheese, pineapple, walnuts, and horseradish! 🙂

    I've been looking for my mom's recipe on Lime Jello Salad but couldn't find it. This is as close to it as I could recall. I remember she used one box lemon and one box lime… I remembered she used mayo instead of the yogurt. I also seem to remember marshmallow's but I don't think they are necessary.
    Hoping the family will love it as much as my Mom's today at Thanksgiving dinner.
